Bibingka one of world’s best cake

Christmas staple bibingka is considered one of the “best cakes in the world,” according to food encyclopedia Taste Atlas.

The Filipino cake, which typically consists of rice flour and water, was ranked 16th and received 4.4 stars.

“This original Filipino delicacy is usually associated with Christmastime, and it is traditionally enjoyed after the mass on Christmas Day. Bibingka is also often served for breakfast,” Taste Atlas wrote.

Bibingka was initially prepared in clay pots that were lined with banana leaves.

Modern variations of the food are now prepared with milk, eggs, coconut milk, sugar, butter, grated cheese, salted duck eggs, and grated coconut.
